ABOUT SONOMA BAKING COMPANY
Sonoma Baking Company use all natural ingredients and processes in the making of their sourdough breads. The dough is gently mixed and then shaped by hand before being left to slowly rise under Belgian linen.

The dough ferments from naturally occurring bacteria and yeasts that proliferate when flour and water are mixed. The distinctive sourdough taste, loose texture and chewy crust are the result of prolonging the fermentation process by chilling the doughs as they rise.

Once risen, breads are then baked on the stone hearth of a radiant gas oven and delivered fresh within hours to many of Sydney's best local provedores, cafes and fine restaurants.

Visit a Sonoma Bakery cafe where you can enjoy fresh panini, sandwiches, pizza, pastry and great coffee. Freshly baked sourdough breads can also be purchased at the source.

GREAT FOOD AND COFFEE AT THE CAFE

Today we visited the Sonoma Baking Company cafe located within the bakery premises in Waterloo, Sydney.

We tried a couple of sandwiches - chicken and tarragon on polenta sourdough, and beef and onion confit - both toasted. Sandwiches and accompanying coffee were fantastic and inspired us to buy a loaf of the polenta sourdough to take home.

Well worth a visit when in the Danks St area.
